From Skagen to Copenhagen

Chef Grysbaek takes you on a journey around the coast of Denmark. Utilizing the beautiful local products Victoria has 
to offer, Grysbaek creates a 6-course degustation, based on regional and traditional dishes known to each area. 

During The Food Trail you will experience authentic fish soup from Skagen, oyster recipe from chef Grysbæk’s home 
town near ‘Limfjorden’, smoked herring from Bornholm Island, prawns from Gilleleje harbour, smoked cheese from 
Fyn Island and a traditional Ryebread cake from Sønderjylland.

  1. Saturday night’s Food Trail dinner create by chef Grysbaek was absolutely delicious. Modern contemporary dishes from around Denmark all beautifully presented and complemented with a range of national beverages. There was a hint of the traditional dishes of seafood, chesses and berries but the clever stylish presentation and plating had everyone at our table talking about Danish food. The introduction given before each dish and the video highlights added to the total food experience. The stand out dish for me was the light, silky, yummy Skagen fish soup any chance of the recipe? Thank you chef and to all the staff who made Saturday night a very memorable gourmet tour of Denmark.
